Montasio is for sure the king of Carnia Alps. If fresh, it can be served with delicate dishes like steamed vegetables. Matured for 2 or 4/8 months. It can be used as filling for salty cakes, oven-roasted pasta, omelets and au gratin dishes. If more aged, it can be used to prepare an unusual pesto or to enrich your béchamel. Aged for 4/8 months.
