OUR COMPANY: OLIVES AND OIL

After accurate researches, “Le Thujae di Villa Carel” has selected a company. Our olive groves and oil mill are situated in the country surrounding the town of Itri. The company produces white olives and black Gaeta olives and from their careful selection the “Itrana” variety is obtained.

The harvest is a very important phase of olives production process. It takes place when the olives reach full maturity and change their color. In fact, when olives are very ripe, have a high content of antioxidants (polyphenols) and are characterized by an intense fruity smell. They are picked by hand and are calibrated and selected the same day in the mill. They are stored in cool and ventilated places, sheltered from light and heat. During this phase it is very important to prevent problems such as the growth of moulds and anomalous fermentations, which can be due to the lack of ventilation.

The storage takes place in 200 Lt. drums filled with drinking water. After about 20/30 days the water is salted according to the classic processing methods of Gaeta olives, from which the name “Itrana” is derived.

After some months of ageing the pulp is characterized by a slightly bitter taste and by the classic light sourness due to natural fermentation; its marked smell is similar to that of old wine must.

From this originate the taste and the fragrance that make this product unique in the world. The oil is bottled wholesome and possible deposits on the bottom of the bottle do not adulterate its taste and quality. It has an intense green color and a middle fruity flavor.

The oil produced by “Le Thujae Carel” has been rated among the best extra-virgin olive oils in Italy.
